How to cook sous vide poached egg with truffled asparagus

Place egg(s) in a thermo bath preheated to 144F. Cook for 45 minutes.

While your eggs are cooking, peel your asparagus.

Season asparagus with white truffle oil and smoked sea salt.

Vacuum seal asparagus - wanna see an Orved chamber vacuum sealer demo?? They're amazing!

Once your eggs are done, carefully remove from bath and increase temp to 160F. Then add sealed Asparagus.

After 15 minutes, you're all set to plate! Garnish as you like and serve. I used Lardons!
